Prawns have always held a special place on our menu—but this time, they come with something special. Our Jumbo Tiger Prawns, Sakura Vermouth, Burnt Leek Oil are flame-grilled to smoky, caramelised perfection, and served with a sauce that took months of fine-tuning to get just right.

The key? Mancino Sakura Vermouth—a floral-forward spirit with a once-a-year release. Its bright, delicate notes cut through the richness of the prawn butter, striking a perfect balance of umami and elegance. Finished with a drizzle of burnt leek oil for an earthy intensity.

This dish stands as a testament to our culinary journey and is a must-try experience at OPC.

8 courses of wood-fired seafood and dry-aged fish for $100++

That’s what One Prawn & Co is offering with their new Chef’s Select Menu and it’s a great way to explore their modern Asian flavours all in one go.

This menu brings together:
🔥 Wood-fire grilling
🐚 Dry-aged seafood
🍽️ Modern Asian flavours

Kick things off with Ostra Regal oysters (fresh or grilled). I preferred the grilled, while my partner enjoyed the fresh so just go with what you like best. That’s followed by a rich ankimo mousse served on a crispy love letter cracker with pink peppercorns.

Then comes a spread of seafood and vegetable dishes that showcase the kitchen’s fire-forward style:
🔥 Octopus with assam pedas hummus — spicy, tangy, satisfying
🌶️ Okra with togarashi and bonito — smoky and punchy
🐟 16-day dry-aged kingfish loin with green goddess sauce — tender and packed with umami

The highlight for me? The jumbo tiger prawns, glazed with sakura vermouth and finished with burnt leek oil, sweet, savoury, and kissed with smoke.

Dessert keeps things playful with a burnt toast ice cream sandwich, topped with banana crumbs and mint.

Minimum 2 to dine, definitely worth it if you’re in the mood for something a little different, with a whole lot of flavour.

🚪 𝗟𝗼𝗼𝗸𝗶𝗻𝗴 𝗳𝗼𝗿 𝗡𝗮𝗿𝗻𝗶𝗮 — Crisp gin, juicy pear, and pine nut syrup. Still in the closet, but we all know the best things don’t stay hidden forever.

☕ 𝗕𝗼𝗸𝘂 𝗻𝗼 𝗣𝗶𝗰𝗼 — Dark rum, a double shot of espresso, and a hit of stout. Pico works at a café. That’s all we know. Don’t ask. Just sip.
